Authentic and original Falafel recipe

Authentic and original Falafel recipe. Falafel is one of the most popular recipes in the Middle East and is made using chickpeas and a traditional blend of herbs and spices.

Ingredients (4 people)

  • ½ kg of chickpeas (cooked PULC102 or dried PULD001)

  • 1 tablespoon of baking soda or baking powder

  • 2 chopped onions

  • 1 teaspoon salt and 1 pinch of black pepper

  • ½ cup fresh parsley

  • ½ teaspoon ground cayenne

  • ½  cup fresh coriander

  • Olive oil (OOCA004)

  • 2 teaspoons ground cumin

  • 1 cup breadcrumbs (FLOU004)

  • 3 garlic cloves, minced

Steps to make it 

1.       Drain the chickpeas. If you want to use dried chickpeas you will have soak them in water the night before.

2.       Put the onion, garlic and herbs in the food processor until finely chopped. Add the spices and the chickpeas before grinding together with the back of a fork – you can blend the chickpeas, but we find grinding them like this gives the final product more texture. Add the salt, ground cumin, black pepper, cayenne, & baking soda. Mix well before leaving the mixture to rest for 30 minutes.

3.       Take a small amount of mixture in your hands and roll between your palms until you have something the shape a ping pong ball. If you are finding the mixture wet or crumbly, add some breadcrumbs to bulk it out.

4.       Fry in plenty of olive oil over medium/high heat until golden brown (5-7 minutes) and serve.

Best served immediately with a simple yogurt sauce. It can also be served with hummus and in pita bread, accompanied by lettuce salad and tomatoes.
