Salt Cod Fritters

Happy Halloween! While you're keeping an ear out for things that go 'bump' in the night, we recommend you whip up your own storm in the kitchen.

Traditionally, during Spanish Halloween we enjoy sweet and salty fritters, so why not sample these on a chilly night?

Ingredients for the Fritters:

- 200g desalted cod

- 1 garlic clove

- 1 small onion

- 1 egg and 1 separated yolk

- Parsley

- Salt

- ½ teaspoon of baking soda (or yeast)

- ½ teaspoon of turmeric

- 130 gr flour

- 150 ml water

- Extra Virgin Olive Oil

Steps to make it:

1.Finely chop the garlic, onion and parsley - put to one side in a small bowl.

2. Roughly chop the cod into cubes, around 1 inch wide.

3. Put the egg and the separated yolk in a large bowl. Combine with the flour, yeast, salt and water. Mix well and then whisk to remove any lumps.

Throw in the garlic, onion and parsley. Followed by the cod, mix well again.

4. Add enough Olive Oil to the pan to come halfway up the sides fo the cod. This is a 'shallow-fry' recipe. Once it is hot (test with a small bit of batter - once it sizzles it is ready).

5. Take a ball of the cod mixture and roll in your hands until it resembles a ping-pong ball. Fry in the oil until brown on all sides. Allow to dry on Kitchen roll to absorb any excess oil.

6. These are a perfect starter to go with a crisp white wine. We recommend dunking in lashings of tartare sauce or aioli. If you're feeling adventurous, a light drizzle of honey contrasts the flavour perfectly.

* If you have to desalt the cod, place the cod in a deep dish and cover with cold water. Soak for 24h, changing the water three times in the process. Remove and discard any bones.
