This gourmet sandwich brings together a balance of sweet, savoury and creamy flavours with a variety of textures. The seeded bread provides a wholesome crunch, the caramelised red peppers add a rich sweetness, the soft goat’s cheese offers creamy acidity and the honey and walnuts round everything off with warmth and crunch. Perfect as a light lunch, an elegant snack or a simple yet sophisticated starter.Ingredients

- 1 seeded bread roll or slice of seeded baguette
- 100 g goat’s cheese log
- 3–4 tbsp caramelised red peppers (Caprichos del Paladar)
- 1 tbsp honey
- A handful of walnuts (20–30 g), roughly chopped
- Optional: a small handful of rocket leaves for freshness
Method
- Slice the seeded roll in half. Lightly toast it if you prefer a crisp texture.
- Spread the goat’s cheese evenly onto both halves of the bread. If the cheese is firm, soften it slightly with a fork or warm it briefly to make it easier to spread.
- Spoon the caramelised red peppers over the cheese, ensuring they are evenly distributed.
- Scatter the chopped walnuts on top to provide texture and a toasted, nutty flavour.
- Drizzle a little runny honey over the filling, just enough to complement the peppers and cheese without overpowering the sandwich.
- Add a handful of rocket leaves for a fresh, peppery contrast if desired.
- Close the sandwich gently and cut in half if serving immediately.
Chefs Notes
Serve with a simple green salad dressed with olive oil and balsamic vinegar. Pair with a light white wine or rosé. Vegetable crisps or oven-baked potato wedges make an excellent accompaniment.
