Lightly Floured Anchovies (Boquerón) with Garlic Lemon Dip

A quick and flavourful tapas-style starter featuring Lightly Floured Anchovies (Boquerón). These ready-to-fry anchovies require no cleaning and come with a delicate crispy coating that enhances their fresh, savoury flavour. Perfect for fast service, they are ready in just 3 minutes and ideal for sharing plates or seafood menus.

Ingredients

- 500g Lightly Floured Anchovies (Boquerón)
- Vegetable oil, for frying
- 1 lemon, cut into wedges
- Fresh parsley, finely chopped (optional garnish)
- 100g mayonnaise
- 1 garlic clove, finely grated
- 1 tbsp lemon juice
- Pinch of salt
- Optional: a few drops of olive oil

Method

Heat vegetable oil in a deep fryer or pan to 180°C.
Fry the lightly floured anchovies directly from frozen in small batches.
Cook for 2–3 minutes until golden, crispy, and lightly puffed.
Remove and drain on kitchen paper to remove excess oil.
Mix all dip ingredients in a small bowl until smooth and creamy.
Plate the anchovies immediately and garnish with parsley if desired.
Serve hot with lemon wedges and garlic lemon dip.

Chefs Notes

Fry straight from frozen to maintain coating integrity and crispness. Do not overcrowd the fryer to keep the temperature stable. Serve immediately after frying for the best texture contrast. Great paired with beer, sparkling water, or a light white wine. Ideal for tapas bars, quick-service restaurants, and seafood sharing platters.
