A flavourful Spanish-style main course featuring premium Crystal Prawns, served with crispy eggs and sweet caramelised peppers.Ingredients

- 300g Crystal Prawns
- 4 eggs
- 2 red peppers, sliced
- 500g potatoes, diced
- Olive oil
- Salt and black pepper
Method
- Fry the potatoes until golden and crisp.
- Slowly cook the peppers until caramelised.
- Fry the eggs and break them over the potatoes.
- Sauté the prawns and serve on top.
