Founder Ceferino experienced a ribeye so decadently marbled in Madrid that it ignited his mission to bring that unparalleled delight to Asturias and the Basque Country. After years of unwavering dedication, he mastered the art of sourcing and butchering ex-dairy cattle, known for their exceptional marbling and tenderness. Trasacar was born in 1989, in Oviedo, Asturias.
Gradually, he captivated Spain’s elite steakhouses, including the legendary Casa Julián, establishing Trasacar as a pioneer in showcasing the culinary treasure of ex-dairy beef. Today Trasacar reigns as the benchmark for premium European beef, celebrated for its consistency and craftsmanship. In 2023, they earned the ‘’Gastronomika’’ award for the best steak, proof that serving Trasacar is serving a legacy of passion, tradition, and relentless pursuit of excellence.
Our journey with Trasacar began in 1999 when David inspected their operation as a vet, and was blown away by their exceptional quality and consistency.
