Fisán journey began over a hundred years ago when D. Fidel Sánchez established the company with a vision to create exceptional Ibérico products. While much has changed since those early days, the core values of dedication and excellence remain the same.
Fisán is now managed by the third generation of the family, and among others, they are the favourite Ibérico pork supplier of Hermanos Torres. Eva, Javier, and Florencio show a passion for their job that lets us believe that generations to come will carry on doing the right things in the right way. FISÁN is quite unique in the area as they have their own abattoir. This allows them full control over the production. They are extremely traditional in their processes; for example, you will see their hams hung with strings rather than in metal hooks, as this allows for a much better airflow and an even curing process.
When you try their Free range 75% iberico bellota hams, their coppa, their meats or their 60 days cured rack you know there is love behind.
